Blueberry Yogurt Bites

Poppable, sweet, a little tart, these yogurt-cloaked berries make a great snack to keep in the freezer year round. Feel free to swap out the blueberries for grapes or small strawberries. Tweak the yogurt mixture by swirling in a bit of cinnamon or almond extract in addition to the vanilla.

Ingredients

Plain fat free Greek yogurt

¼ cup(s)

Honey

1 tsp

Vanilla extract

½ tsp

Blueberries

¾ cup(s), preferably jumbo

Instructions

  1. Line a small baking sheet or large plate with parchment paper.
  2. In a small bowl, stir together the yogurt, honey, and vanilla until well combined. Working with 1 blueberry at a time, pierce with a toothpick and swirl in the yogurt mixture to coat. Place on the prepared plate. Repeating with remaining blueberries and yogurt.
  3. Place blueberries in the freezer and freeze for at least 1 hour. Transfer blueberries to a resealable ziptop bag. Store in the freezer until ready to eat.
  4. Serving = approximately 30 bites
