Instructions

  1. In a small bowl, stir together the yogurt, ketchup, mustard, 1/4 tsp onion powder, garlic powder, and a pinch of salt. Stir until well combined. Set aside.
  2. Press half of the beef onto 1 tortilla, spreading in a thin layer to cover the tortilla. Repeat with the remaining beef and tortilla. Season beef with remaining 1/4 tsp onion powder, 2 pinches salt, and black pepper.
  3. Coat a medium nonstick skillet with cooking spray. Heat on medium-high. Add the tortilla, beef side down. Cook 1 to 2 minutes, until browned.
  4. With a wide spatula, carefully flip tortilla over. Place 1/2 of the American cheese slice on one half of the circle of beef. Cook 1 minute, until tortilla is toasted in spots and cheese is mostly melted. Transfer to a platter or cutting board. Repeat cooking with remaining tortilla and cheese.
  5. Top tacos with the onion, lettuce, tomato, pickles, and sauce. Serve immediately with any remaining sauce on the side.
  6. Serving size: 2 tacos
