Here’s a fabulous way to use up leftover chicken. Whip up these pizzas as a quick-and-tasty dinner or easy lunch, or slice them into skinny wedges and enlist them into delicious service as a party appetizer or satisfying snack. You can also bake them and then roll them up wrap-style for easy eating on the go. Take things in a Hawaiian direction by adding a few drained, canned pineapple tidbits to the topping mix if it suits your taste, or swap the chicken for leftover lean, pork tenderloin as an equally delicious option.

Ingredients

6" flour tortilla

4 item(s)

Cooking spray

2 spray(s)

Cooked skinless boneless chicken breast

1 cup(s), chopped, or shredded

Barbecue sauce

½ cup(s)

Gouda cheese

3 oz, smoked or regular, shredded (about 3/4 cup)

Red onion

½ small, cut in thin slivers

Cilantro

½ cup(s), fresh, chopped

Instructions

Bake tortillas in a 375 degree oven just until lightly crisp, about 4 minutes.

In a small bowl, toss chicken with barbecue sauce. Divide mixture evenly over tortillas.

Sprinkle each with 3 tablespoons cheese and 2 tablespoons onions. Bake until cheese melts and bottoms of tortillas are lightly browned, about 4 minutes.

Remove from oven and sprinkle each pizza with 2 tablespoons cilantro. Slice each pizza and serve.
