Here’s a fabulous way to use up leftover chicken. Whip up these pizzas as a quick-and-tasty dinner or easy lunch, or slice them into skinny wedges and enlist them into delicious service as a party appetizer or satisfying snack. You can also assemble these atop flour tortillas and bake just until the cheese melts and then roll them up wrap-style for easy eating on the go. Take things in a Hawaiian direction by adding a few drained, canned pineapple tidbits to the topping mix if it suits your taste, or swap the chicken for leftover lean, pork tenderloin as an equally delicious option.

Ingredients

cooking spray

cooked skinless boneless chicken breast(s)

1 cup(s), chopped, or shredded

barbecue sauce

½ cup(s)

Gouda cheese

3 oz, smoked or regular, shredded (about 3/4 cup)

uncooked red onion(s)

½ small, cut in thin slivers

cilantro

½ cup(s), fresh, chopped

Flatout Rustic white Artisan thin pizza crust

4 flatbread(s)

Instructions

  1. Bake Flatout Thin Crust Pizza at 375 degree oven for 2 minutes.
  2. In a small bowl, toss chicken with barbecue sauce. Divide mixture evenly over 4 Thin Crust Pizzas.
  3. Sprinkle each Thin Crust Pizza with 3 tablespoons cheese and 2 tablespoons onions. Bake until cheese melts and bottoms of crusts are lightly browned, about 4 minutes.
  4. Remove from oven and sprinkle each pizza with 2 tablespoons cilantro. Slice each pizza and serve.

Notes

Serve with lime wedges, if desired. Yields 1 pizza per serving.
