Here’s a fabulous way to use up leftover chicken. Whip up these pizzas as a quick-and-tasty dinner or easy lunch, or slice them into skinny wedges and enlist them into delicious service as a party appetizer or satisfying snack. You can also bake them and then roll them up wrap-style for easy eating on the go. Take things in a Hawaiian direction by adding a few drained, canned pineapple tidbits to the topping mix if it suits your taste, or swap the chicken for leftover lean, pork tenderloin as an equally delicious option.

Ingredients

6 inch flour tortilla

4 item(s)

Cooking spray

2 spray(s)

Cooked skinless boneless chicken breast(s)

1 cup(s), chopped, or shredded

Barbecue sauce

½ cup(s)

Gouda cheese

3 oz, smoked or regular, shredded (about 3/4 cup)

Uncooked red onion(s)

½ small, cut in thin slivers

Cilantro

½ cup(s), fresh, chopped

Instructions

  1. Bake tortillas in a 375 degree oven just until lightly crisp, about 4 minutes.
  2. In a small bowl, toss chicken with barbecue sauce. Divide mixture evenly over tortillas.
  3. Sprinkle each with 3 tablespoons cheese and 2 tablespoons onions. Bake until cheese melts and bottoms of tortillas are lightly browned, about 4 minutes.
  4. Remove from oven and sprinkle each pizza with 2 tablespoons cilantro. Slice each pizza and serve.

Notes

Serve with lime wedges, if desired. Yields 1 pizza per serving.
