When you start with cooked chicken—whether from a rotisserie bird or last night’s grilled leftovers—this summery meal comes together super quickly. Toss the cooked poultry in your favorite barbecue sauce, then nestle it in a bowl with uncooked sweet corn. A quick coleslaw made from packaged cabbage mix and bottled dressing rounds out the mix.

Ingredients

Packaged coleslaw mix (shredded cabbage and carrots)

2½ cup(s)

Scallions

1 medium, chopped

Reduced fat ranch dressing

2 Tbsp

Cooked boneless skinless chicken breast

1½ cup(s), chopped

Barbecue sauce

2 Tbsp

Frozen corn

1 cup(s), thawed, or fresh corn

Instructions

  1. In a medium bowl, toss the coleslaw mix, scallion, and dressing. Divide the salad between 2 bowls.
  2. In a small bowl, toss the chicken and barbecue sauce. Top the salads with the chicken.
  3. Top each bowl with ½ cup of the corn. Serve immediately. Or cover the salads and refrigerate for up to 1 day.
