This is the best parts of banana splits combined with ice-cream sandwiches. Who could possibly resist that? The best part is you only need 5 ingredients and less than 10 minutes, thanks to using store-bought pound cake. Simply spoon strawberry jam on one side of the browned cake, spread vanilla ice cream on one side of the other slices, then smush them together. Top with sliced bananas and then drizzle with fudge topping; it's as easy as that. For added convenience, you can make the sandwiches ahead—minus the bananas and chocolate sauce—and freeze them individually wrapped for up to 2 months.

Ingredients

Fat-free pound cake

¼ pound(s), 8 (1/4-inch) slices

Strawberry jam

¼ cup(s)

Fat free no sugar added ice cream

1 cup(s), vanilla flavored

Banana

1 large, sliced

Fat-free fudge topping

Instructions

  1. Spray a nonstick ridged grill pan with nonstick spray and set over medium heat. Place the slices of pound cake on the pan and cook until browned, about 1 1/2 minutes on each side.
  2. Spread 1 tablespoon jam on one side of 4 slices of cake. Spread 1/4 cup ice cream over each of the remaining 4 slices of cake. Place, ice cream side down, on top of the jam covered slices to make 4 sandwiches in all.
  3. Place each sandwich on a dessert plate and top evenly with the banana. Drizzle evenly with the chocolate sauce and serve at once. Yields 1 garnished sandwich per serving.
