Get a more substantial breakfast out of banana bread by transforming it into French toast. After soaking in the egg-milk mixture and cooking, the slices turn crispy on the outside and stay delightfully tender on the inside. While we love how this recipe tastes with our Avocado Banana Bread, you can try it with any type of banana bread—so long as it isn’t fresh. The just-baked stuff doesn’t soak up the milk mixture as well as day-old bread.

Ingredients

Cooking spray

4 spray(s)

Plain unsweetened almond milk

¼ cup(s)

Ground cinnamon

tsp

Egg

1 large egg(s)

Avocado Banana Bread

3 slice(s), halved (search for the recipe in the WW app)

Powdered sugar (confectioner's)

½ tsp

Strawberries

1 cup(s), sliced

Instructions

  1. In a pie plate or shallow baking dish, whisk the milk, cinnamon, and egg. Add the bread to the pie plate in a single layer. Let the bread soak for 1 to 2 minutes per side.
  2. Coat a large nonstick skillet with cooking spray and heat over medium-low. Add the bread and cook until browned and crisp, 2 to 4 minutes per side. Divide the toast between 2 plates. Using a fine-mesh sieve, sift the powdered sugar over the toast. Top with the strawberries.
  3. Serving size: 3 toast pieces and ½ cup strawberries
