Asian turkey noodle bowls with peanuts

This is a substantial meal in a bowl thanks to the inclusion of vermicelli noodles and ground turkey. The sauce is a sweet and savory mix of chicken broth, lime zest and juice, brown sugar, soy sauce, fish sauce, and chili-garlic paste. Then the turkey, broccoli, ginger, and garlic are all cooked in one skillet, so you won't have a ton of pots and pans to clean up when you're done. Got some leftovers? Ingredients

Uncooked thin rice vermicelli noodles

4 oz, stick

Chicken broth

¼ cup(s)

Lime zest

2 tsp, grated

Fresh lime juice

Packed brown sugar

1 Tbsp

Soy sauce

1 Tbsp

Asian fish sauce

2 tsp

Garlic chili paste

1½ tsp

Peanut oil

2 tsp

Uncooked extra lean ground turkey breast

1 pound(s), skinless

Five-spice powder

½ tsp

Table salt

¼ tsp

Broccoli

3 cup(s), chopped, small florets

Garlic

3 clove(s), minced

Fresh ginger

1 Tbsp, peeled fresh, minced

Cilantro

¼ cup(s), chopped

Unsalted dry roasted peanuts

4 Tbsp, coarsely chopped

Instructions

Prepare rice stick noodles according to package directions. Drain well and transfer to medium bowl.

Meanwhile, whisk together broth, lime zest and juice, brown sugar, soy sauce, fish sauce, and chili-garlic paste in small bowl until brown sugar dissolves.

Heat 1 teaspoon oil in large skillet over medium-high heat. Add turkey, five-spice powder, and salt. Cook, breaking turkey apart with wooden spoon, until turkey is no longer pink and most liquid has evaporated, about 5 minutes. Add turkey mixture to noodles.

Heat remaining 1 teaspoon oil in same skillet over medium-high heat. Add broccoli, garlic, and ginger. Cook, stirring constantly, just until broccoli turns bright green, about 4 minutes. Add noodles and turkey mixture to broccoli in skillet and cook, tossing, until heated through. Remove from heat and stir in lime mixture. Sprinkle with cilantro and peanuts.

Serving size: 1 cup noodles and broccoli and 1 tablespoon peanuts
