We just love this simple, crunchy, delicious salad designed for one. All you have to do is whisk together the balsamic vinegar, fresh lemon juice, canola oil, honey, salt, and pepper. (This dressing is so good, you'll be making it many times for many types of salad.) Add the cherries, toss to coat and let them sit to macerate a bit, then add the arugula and toss again. Slivered red onion and thinly sliced cucumber would be lovely additions to this salad. If you're not a fan of peppery arugula's bite, feel free to substitute with your favorite kind of greens, such as romaine, iceberg, even a bag of mixed greens.

Ingredients

Balsamic vinegar

½ Tbsp

Fresh lemon juice

Canola oil

1 tsp

Honey

¾ tsp

Table salt

1 pinch(es), or to taste

Black pepper

Cherries

¼ cup(s), pitted, halved

Arugula

3 cup(s), baby variety

Instructions

  1. Whisk together vinegar, lemon juice, oil, honey, salt and pepper in a bowl. Add cherries, toss to coat and let sit for 5 to 10 minutes; toss with arugula.
  2. Makes 1 serving.
