Arugula with Cherry Vinaigrette
Slivered red onion and thinly sliced cucumber would be lovely additions to this salad.
balsamic vinegar½ Tbsp
fresh lemon juice½ Tbsp
canola oil1 tsp
table salt1 pinch, or to taste
black pepper1 pinch, or to taste
cherries¼ cup(s), pitted, halved
arugula3 cup(s), baby variety
- Whisk together vinegar, lemon juice, oil, honey, salt and pepper in a bowl. Add cherries, toss to coat and let sit for 5 to 10 minutes; toss with arugula.
- Makes 1 serving.
