This easy, elegant appetizer uses apple slices as the base for a sophisticated flavor combo featuring cream cheese, pistachios, honey, thyme, and blue cheese. If you’re not a fan of blue cheese, you can simply omit it or substitute goat cheese for a similar punch. And if you don’t have thyme on hand, you can either omit it or substitute chopped rosemary or mint.

Ingredients

Fresh apple(s)

1 large

Reduced-fat whipped cream cheese

4 Tbsp

Shelled pistachio nuts

¼ cup(s), chopped

Blue cheese

1½ Tbsp, crumbled

Honey

2 tsp

Fresh thyme

½ tsp, leaves

Instructions

  1. Standing the apple upright on a cutting board, slice off 4 (¼-inch-thick) slices from opposite sides of the apple; reserve the remaining apple for another use. Arrange the 8 apple slices on a platter or board. Spread 1 ½ tsp cream cheese over each apple slice; sprinkle the apple slices evenly with the pistachios and blue cheese. Drizzle the honey over the top, and sprinkle with the thyme leaves.
