Apple and Carrot Salad

You can add cubes of cooked chicken, turkey, or ham to this Waldorf-like salad for a quick and easy main-dish lunch or light dinner.

fresh apple(s)2 medium, Granny Smith, chopped
uncooked carrot(s)5 oz, matchstick-cut
uncooked celery1 rib(s), medium, finely chopped
chopped walnuts1 Tbsp, toasted
crisp cooked bacon2 slice(s), crumbled
- Combine the mayonnaise, vinegar, and sugar in a large bowl. Add the apples, carrots, celery, raisins, and walnuts; toss to coat well. Sprinkle with the bacon and serve at once. Yields 1 1/4 cups per serving.
