Air Fried Cottage Cheese-Stuffed Tomatoes

With seventeen grams of protein and only four Points, this versatile dish can be enjoyed all on its own, with a side of rice or pasta, or as an accompaniment to grilled chicken. Feel free to riff on the stuffing with chickpeas instead of the cannellini beans or crumbled feta and mint instead of the Parmesan and basil.

Kosher salt

Canned cannellini beans

2% low fat cottage cheese

Grated Parmigiano-Reggiano
⅓ cup(s)
Seasoned breadcrumbs
¼ cup(s)
Fresh basil

Preheat air fryer on 400F, if necessary.

Trim tops off the tomatoes, reserving. With a spoon, scoop centers out of tomato, leaving the walls intact (save tomato innards for salsa or throw into a salad). Season the insides of the tomatoes with the salt.

In a medium bowl, combine the beans, cottage cheese, Parmigiano cheese, breadcrumbs, basil, and oil.

Spoon bean mixture into tomatoes, packing in tightly. Coat the bottom of the air fryer basket with the olive oil spray and place tomatoes in basket. Replace tomato tops and coat tops with olive oil.

Air fry tomatoes 8 to 10 minutes, until tomatoes are tender and tops are golden brown. Let stand 5 minutes before serving.
