Notes

Heat oil in a nonstick pan over medium heat. Add squash slices, onion flakes and ground meat substitute. Sauté until tender, stirring occasionally. Combine bulgur, lemon juice, parsley and scallions in a small bowl and mix well. Place on plate and top with squash mixture and broiled tomatoes.
