Notes

Heat oil in a nonstick skillet over medium-high heat. Add chicken, chili powder, onion and peppers. Cook, stirring occasionally, until vegetables are tender and chicken is cooked through, about 5 minutes. Serve over rice and top with salsa and sour cream.
