Apple and Fennel Salad
½ large, cut into matchsticks or thinly sliced
½ cup(s), thinly sliced
low-fat vinaigrette salad dressing
shredded Parmigiano Reggiano cheese
1 Tbsp, or shaved
Place apple and fennel in a small bowl; add dressing and toss to coat. Sprinkle with cheese (if you don’t have a mandoline, either thinly slice cheese with a knife or just chop it).
