This salad pairs the sweetness of grapes with tart, creamy goat cheese. When cherries are in season, swap pitted cherries for grapes.

Olive oil

Water

Honey mustard

4 tsp(s)

Apple cider vinegar

1 tbsp(s)

Table salt

Black pepper

Fresh spinach

Grapes

1 cup(s), red, seedless, halved

Red onion

medium, or thinly sliced

Slivered almonds

¼ cup(s), toasted

Semisoft goat cheese

¼ cup(s)

Instructions

  1. To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.
  2. Add spinach, grapes and onion to bowl; toss to mix and coat.
  3. Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese.
  4. Yields 1 salad per serving.

Notes

Short on time? Use a bottled, light Dijon vinaigrette dressing instead (could result in a change to Points values).
