Zucchini is plentiful in the late summer months. So get out that grater and prepare these tender, tasty "pancakes" - a welcome addition to any dinner table.

Ingredients

Zucchini

2 medium, coarsely grated

Onion

½ small, coarsely grated

Dried plain breadcrumbs

tbsp(s)

Grated Parmesan cheese

2 tbsp(s)

Pine nuts

2 tbsp(s), finely chopped

Raw egg

1 large

Egg whites

1 serving(s), large

Table salt

tsp(s), or to taste

Black pepper

pinch(es), or to taste

Instructions

  1. Stir together all ingredients; mix well.
  2. Coat a large nonstick skillet with cooking spray and set it over medium heat. Spoon batter into skillet to form 3-inch pancakes. Fry on each side until golden, about 3 minutes per side. Repeat with remaining batter. Yields 2 pancakes per serving.
