Instead of granola, try making a parfait with cubes of toasted banana bread for a trifle-like take on breakfast. We call for navel oranges, but you could also use Cara Cara or blood oranges. The juicy citrus naturally sweetens the tart yogurt and adds gorgeous colour. Broilers can vary in intensity so be sure to keep an eye on it to avoid burning.

Avocado Banana Bread

1½ slice(s), cubed

Orange

2 medium, navel

Plain fat free Greek yogurt

Instructions

  1. Preheat broiler to low. Line a small sheet pan with foil. Arrange Avocado banana bread on pan and lightly coat with nonstick spray. Broil until toasted, about 2 minutes. Turn bread over, coat with nonstick spray, and broil until toasted on other side, about 2 minutes. Cool slightly; cut bread into cubes.
  2. Using a sharp knife, cut off all peel and white pith from oranges. Working over a small bowl, cut between membranes to release orange segments. Spoon ¼ cup yogurt into each of 2 parfait glasses. Divide half of orange segments over yogurt; top with half of bread cubes. Repeat layers with remaining yogurt, orange segments, and bread cubes.
