This salad gets its sophisticated flavour from fresh fennel, which imparts a subtle taste of anise. Serve it with just about anything Italian, or with pork.

Ingredients

Balsamic vinegar

2 tbsp(s)

Olive oil

1 tsp(s)

Table salt

¾ tsp(s)

Ground sage

½ tsp(s)

Black pepper

¼ pinch(es), freshly ground

Uncooked fennel bulb

2 medium, trimmed and thinly sliced

Canned cannellini beans

19 oz, rinsed and drained

Instructions

  1. In a large bowl, whisk the vinegar, oil, sage and pepper. Add the fennel and beans; toss gently to coat.
