Perfect as an appetiser, this delicious bean bruschetta is super-easy to make. Use any leftover puree as a dip for raw veggies like carrots, celery or radishes.


Ingredients
French bread
4 slice(s)
Canned cannellini beans
15 oz, drained and rinsed
Garlic
2 clove(s), large, minced
Fresh lime juice
½ tsp(s)
Water
2 tbsp(s)
Smoked paprika
⅛ tsp(s), or to taste
Table salt
⅛ tsp(s), or to taste
Black pepper
⅛ pinch(es), or to taste
Tomato
1 medium, coarsely chopped
Fresh basil
2 tbsp(s), for garnish
Instructions

Preheat oven to 400°F.

Toast bread in oven for 8 to 10 minutes or until lightly browned.

Purée beans with garlic, lemon juice and water until smooth. Adjust seasonings to taste.

Spread purée on toast. Top each with a few pieces of tomato, and garnish with basil leaves.
