Watermelon juice is so refreshing! And if you pour it over crushed ice, it’s the most welcome relief on a hot day. This treat is one of those handy snacks that can be prepared ahead of time. Make the watermelon juice ahead, then cover and refrigerate. Prepare cups of crushed ice and keep them in the freezer. All that’s left is then to drizzle the pretty pink watermelon juice over the crushed ice. Serve right away!

Ingredients

Water

8 cup(s), crushed ice

Watermelon

3 pound(s), seedless

Sea salt

¼ tsp(s)

Fresh basil

8 leaf/leaves, or mint leaves, for garnish (optional)

Instructions

  1. Tightly pack six 6-oz freezer-safe glasses with ice, mounding each top with extra ice to create dome shape. Place glasses in freezer until ready to serve.
  2. Line fine-mesh strainer with 2 layers of cheesecloth and set over large bowl. Scoop red flesh and juice from watermelon into blender. Add sea salt and purée until watermelon is completely liquefied. Strain juice through cheesecloth into bowl. Transfer to small pitcher or squeeze bottle. Cover and refrigerate until cold, at least 1 hour.
  3. Shake or stir watermelon juice. Slowly pour juice over packed ice in glasses so ice turns pink. Garnish each glass with basil or mint (if using). Serve immediately with spoons.
  4. Serving size: 1 sno-ball
