Wasabi Mashed Potatoes

We conclude spice-fusion week with these wasabi-laced potatoes. The addition of just one flavour-packed ingredient really can elevate a recipe to new heights.


Ingredients
Uncooked potato
4 medium, peeled and cut into large chunks (about 2 lbs)
2% reduced fat milk
½ cup(s)
Wasabi powder
1 tsp(s), or more to taste
Reduced-fat sour cream
2 tbsp(s)
Salted butter
1 tbsp(s)
Chives
1 tbsp(s), fresh, minced
Table salt
½ tsp(s)

Boil potatoes in a large pot of water over high heat until very tender when pricked with a fork, about 15 to 20 minutes; drain and mash potatoes with a hand masher or electric mixer.

Heat milk in a small saucepan over medium heat for 5 minutes; add wasabi powder and stir to dissolve. Add milk mixture, sour cream, butter, chives and salt to potatoes; stir to combine. Yields a generous 1/2 cup per serving.
