This is everything you love about a taco, but without the additional calories and carbs from the tortillas. Our recipe features white rice that's flavoured with cilantro, lime zest, and lime juice, as well as ground turkey spiced with chili powder, cumin, and canned chipotle chiles. The spicy turkey is balanced out by crushed tomatoes and dark brown sugar, which are all cooked down until the sauce is nicely thickened. After creating 4 large lettuce cups, pile on the turkey mixture, cilantro rice, chopped fresh tomatoes, salsa, sliced scallions, and more cilantro. It's so delicious, you'll never get a takeout taco bowl ever again.
