There’s something about warm toasted nuts that is absolutely enticing. These are roasted with piney fresh rosemary and a pinch of cayenne for a hint of heat in every bite. We roast the nuts at a low temperature (300°F) for a few minutes on their own, without any seasoning, to establish a baseline of crunchy toastiness. Then the nuts are tossed with a little oil, rosemary, salt, and cayenne; the oil helps the seasonings stick. They’re tasty at room temperature, too, but at their flavour peak when warm.

Almonds

1 cup(s), sliced, whole, raw

Olive oil

1 tbsp(s)

Rosemary

2 tsp(s), finely chopped

Kosher salt

½ tsp(s)

Cayenne pepper

1 pinch(es), optional

Preheat the oven to 300°F. Line a sheet pan with parchment paper.

Spread the nuts onto the prepared pan. Roast at 300°F for 12 minutes. Remove the pan from the oven (keep the oven on). Pour the nuts into a medium bowl. Add the oil, rosemary, salt, and cayenne; toss well to coat. Spread the seasoned nuts onto the pan. Roast until the nuts are crunchy and deeper brown in color, 13 to 15 minutes. Serve warm.
