Waffles with yogurt & cherry compote

Just because you need a quick and easy breakfast, that doesn’t mean you can’t have an elegant one. Here, frozen multigrain waffles are topped with creamy Greek yogurt (for protein and richness) and a speedy microwave compote made from frozen cherries. Pistachios finish off the dish with lovely colour and crunch.


Ingredients
Frozen unsweetened dark sweet cherries
1 cup(s)
Cornstarch
½ tsp(s)
Frozen whole grain waffles
2 item(s), toasted
Plain fat free Greek yogurt
½ cup(s)
Shelled pistachio nuts
16 kernel(s), coarsely chopped
Instructions

In a 2-cup glass measuring cup or medium microwave-safe bowl, stir together the frozen cherries and cornstarch. Microwave on High until very bubbly, 2 ½ to 3 minutes. Arrange the waffles on a plate and top with the yogurt. Spoon the cherry compote over the top; sprinkle with the pistachios.
