We love how quickly and easily this delicious chicken sandwich comes together and we designed this recipe to serve just you and only you as a delightful midday meal. Of course, you can scale it up if you would like too.


Ingredients
Cooking spray
2 spray(s)
Carrots
1 small, shredded
Red onion
2 tbsp(s), minced, thinly sliced
Cilantro
2 tbsp(s), fresh, chopped
Fresh lime juice
1 tbsp(s)
Garlic chili paste
½ tsp(s)
Uncooked boneless skinless chicken breast
3 oz, cutlet
Table salt
¼ tsp(s)
Black pepper
⅛ tsp(s)
Light mayonnaise
1 tbsp(s)
Fresh mint leaves
1 tbsp(s), chopped
Lime zest
¼ tsp(s), grated
French baguette bread
3 oz, cut in half lengthwise
Instructions

Combine carrot, onion, cilantro, lime juice and chili-garlic paste in small bowl and toss to coat. Let stand at room temperature while preparing sandwich.

Sprinkle chicken with salt and pepper. Spray ridged grill pan with nonstick spray and set over medium-high heat. Add chicken and cook, turning once, until browned and cooked through, about 6 minutes.

Meanwhile, stir together mayonnaise, mint and lime zest in a small bowl. Spread cut sides of baguette with mayonnaise mixture.

Place chicken on bottom half of baguette and top evenly with vegetable mixture. Cover with top of baguette.
