These lightly sweet and super-savoury sausage patties will be a hit at your next brunch party. Make them ahead and store in waxed paper to ease morning-of prep.

Ingredients

Uncooked venison (deer)

450 gm, ground

Minced onion

½ cup(s), finely grated

Granny Smith apple

½ cup(s), grated

Fresh sage

4 tsp(s), minced

Sugar

4 tsp(s)

Kosher salt

2 tsp(s)

Ground allspice

¼ tsp(s)

Instructions

  1. Combine venison, onion, apple, sage, sugar, salt, and allspice in a medium bowl. Shape into 12 five-centimetre (two-inch) patties. Coat a large non-stick griddle with cooking spray over medium heat. Cook patties until lightly browned and cooked through.

Notes

Patties can be made ahead and frozen too. Just be sure to defrost them fully before cooking.
