Ingredients

Garlic

2 clove(s), large, sliced

Fresh lemon juice

2 tbsp(s), optional

Onion

1 medium, diced

Carrots

2 medium, diced

Red bell pepper

1 medium, diced

Celery

1 stalk(s), medium, diced

Zucchini

2 small, diced

Cooked green cabbage

2 cup(s), shredded, coarsely grated

Uncooked Swiss chard

2 cup(s), chopped

Uncooked cauliflower

2 cup(s), small bunches

Broccoli

2 cup(s), small bunches

Fresh thyme

2 tsp(s), chopped

Vegetable broth

6 cup(s)

Fresh parsley

2 tbsp(s), or chopped fresh chives

Table salt

½ tsp(s), or to taste

Black pepper

¼ tsp(s), or to taste

Instructions

Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low, and simmer for 10 minutes.

Stir in parsley or chives; add salt, pepper and lemon juice to taste.

Makes about 250 ml (1 cup) per serving.
