Ingredients
Sugar substitute
6 tsp(s), calorie free sweetener such as Splenda or Sweet'N Low
Vanilla extract
1 tsp(s)
Orange zest
½ tsp(s), freshly grated
Orange
2 medium, navel, peeled, white pith and pits removed
Grapefruit
1 medium, ruby, peeled, white pith and pits removed
Grapes
1 cup(s), red or green, seedless, halved lengthwise
Peppermint leaves
4 piece(s), fresh, sprigs for garnish (optional)
Instructions

Stir sugar substitute, vanilla extract and orange peel together in a medium bowl until sugar dissolves.

Cut oranges and grapefruit into segments; add to vanilla mixture. Squeeze orange and grapefruit membranes over bowl to add juices. Add grapes; toss to mix. Serve immediately or cover and refrigerate up to 2 days.

To serve, spoon into compote cups and drizzle with juices. Garnish each with a mint leaf, if desired.
