Convenient frozen cheese ravioli is bulked up with sugar snap and green peas, then tossed with the zest and juice of a lemon for a dish that feels bright and fresh.


Ingredients
Frozen cheese ravioli without sauce
12 oz
Uncooked sugar snap peas
8 oz, trimmed (or frozen snap peas)
Frozen green peas
1 cup(s), thawed
Lemon zest
1 tsp(s)
Fresh lemon juice
1½ tbsp(s)
Extra virgin olive oil
1½ tbsp(s)
Kosher salt
½ tsp(s)
Black pepper
½ tsp(s)
Instructions

Bring a large pot of water to a boil. Add ravioli and cook 3 minutes. Add sugar snap peas and cook 2 minutes. Add green peas and cook 1 minute or until ravioli is tender and sugar snap peas are crisp-tender. Drain.

In a large bowl, stir together lemon zest and juice, oil, salt, and pepper. Add ravioli mixture and toss gently to coat.
