Two-ingredient sweet potato-tortillas

Switch up taco night with these tasty, orange tortillas! They're packed with Vitamin A and are super simple to make. To streamline prep work, look for store-bought cooked sweet potato puree, or buy plain cooked sweet potatoes from your super market's prepared food counter.

Sweet potato
10½ oz
Whole wheat flour
⅔ cup(s)
Instructions

Pierce potatoes several times with a fork; place on a plate in microwave. Microwave on High until softened, about 10 minutes; let potatoes cool for a few minutes.

Spoon flesh out of potatoes and place in a bowl; discard peel. Add flour to bowl; combine into a smooth dough (add a little salt, if desired).

Divide dough into 8 equal pieces; roll each piece into a ball. On a lightly floured surface, roll each ball into a thin circle.

Warm a nonstick skillet over medium-high heat; add a tortilla and cook until browned in spots, flipping once, about 1 minute per side. Remove tortilla to a plate; cover with a clean kitchen towel to keep warm. Repeat with remaining dough to make 8 tortillas.
