Turkey-veggie pizza bowls

This low-carb meal gives you your favourite pizza flavours, but without the crust. We cook up ground turkey breast and an abundance of vegetables, then stir in marinara sauce and divide the mixture among bowls. The concoction is then topped with cheese and pepperoni and run under the broiler. If you don’t have broiler-safe ramekins or bowls, you can simply pop the bowls in the microwave for a minute or two to melt the cheese.

Red bell pepper

Cremini mushrooms

Onion

Store-bought marinara sauce

Coat a large nonstick skillet with cooking spray and heat over medium-high. Crumble in the turkey, then add the zucchini, bell pepper, mushrooms, onion, and garlic. Sprinkle with the salt and pepper flakes. Cook until the turkey is cooked through and the vegetables are softened, 8 to 10 minutes, stirring occasionally. Stir in the marinara sauce and cook 2 minutes.

Preheat the broiler to High. Divide the turkey mixture evenly among 4 (8-oz) broiler-safe ramekins or bowls. Top evenly with the cheese and the pepperoni. Arrange the bowls on a sheet pan. Broil until the cheese melts, 1 to 2 minutes.
