Turkey Kielbasa Stew with White Beans & Swiss Chard
Uncooked turkey kielbasa
Canned cannellini beans
29 oz, (1 can), drained and rinsed
Canned diced tomatoes
14½ oz, (1 can)
Fat-free reduced sodium chicken broth
2 medium, thinly sliced
Uncooked Swiss chard
3 cup(s), leaves, lightly packed
- Cut the sausage on an angle into 11⁄2-inch-long slices. In a 5-or 6-quart slow cooker, combine the sausage, beans, tomatoes with juices, stock, scallions, and black pepper. Cover and cook until the stew is slightly thickened, 4 to 5 hours on High or 8 to 9 hours on Low.
- Stir the chard into the stew. Cover and cook on High just until the chard is wilted, about 5 minutes. Divide the stew among 6 bowls.
- Serving size: about 1 1⁄2 cups
