Perfect for a light appetizer, lunch, or snack, these colourful turkey roll-ups provide just the right amount of protein and veggies to keep your hunger at bay.

Ingredients

Deli sliced turkey breast

4 slice(s)

Plain hummus

2 tbsp(s), or homemade, divided

Bell pepper

1 item(s), medium, sliced into thin slices, divided

Cucumber

½ medium, sliced into thin slices lengthwise, divided

Shredded carrots

½ cup(s), divided

Instructions

  1. Lay your slices of turkey flat on a cutting board, plate, or parchment paper.
  2. Spread ½ tablespoon of hummus onto each slice of deli turkey. Add the sliced vegetables 1 inch from the bottom of the turkey.
  3. Roll up the turkey starting from the bottom and refrigerate until time to consume.
  4. 4 turkey roll-ups per serving.
