Tropical Mango-Jicama Chicken Salad

This salad has great crunch thanks to jicama – a root vegetable with crisp, sweet, white flesh that is widely available at most large supermarkets.


Ingredients
Red onion
1½ cup(s), sliced, thinly sliced
Fresh lime juice
¼ cup(s)
Olive oil
1 tbsp(s)
Table salt
¾ tsp(s)
Cumin seeds
½ tsp(s)
Hot pepper sauce
¼ tsp(s)
Uncooked jicama
2¼ cup(s), diced (about 12oz)
Cooked skinless, boneless chicken breast
½ pound(s)
Mango
1 large, cut into 3/4-inch chunks
Cilantro
½ cup(s), fresh, chopped
Instructions

Combine onion, lime juice, oil, salt, cumin and hot pepper sauce in a large bowl; let stand 10 minutes, tossing occasionally until onion wilts.

Add jicama, chicken, mango and cilantro; toss to mix and coat. Yields about 1 1/4 cups per serving
