Tropical fruit and cucumber make this main dish salad super-refreshing. The next time you're grilling chicken breasts, make extra for this recipe.

Ingredients

Unsweetened orange juice

2 tbsp(s)

Rice wine vinegar

1 tbsp(s)

Olive oil

2 tsp(s)

Table salt

¼ tsp(s)

Black pepper

¼ pinch(es), freshly ground

Fresh mixed greens

4 cup(s)

Cooked skinless boneless chicken breast

5 oz

Pineapple

¾ cup(s), fresh, cut into chunks

Mango

¾ cup(s), fresh, cut into chunks

Cucumber

¾ cup(s), seedless, cut into chunks

Peppermint leaves

¼ cup(s), fresh, cut into thin strips

Red onion

¼ cup(s), sliced, thinly sliced

Instructions

  1. In a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended.
  2. Add salad greens, chicken, pineapple, mango, cucumber, mint and onion; toss to mix and coat. Serve immediately. Yields about 3 cups per serving.

Notes

*You can buy precooked chicken strips if you prefer.Give this salad a Cuban spin by adding a sprinkle of cumin to the dressing and swapping out the mint for fresh cilantro.
