Ingredients
Lemon
4 medium, yellow peels removed and juiced
Water
2 cup(s), boiling
Sugar
6 tbsp(s), or sweetener if preferred
Fresh mint leaves
6 sprig(s)
Strawberries
6 medium, each cut into half
Ice cube
24 cube(s), 4 cubes per glass
Sparkling water
4 cup(s), (1 L)
Instructions
1
Using a potato peeler, pare the zest from the lemons. Make sure you only remove the yellow part as the white pith is bitter. Set the remainder of the lemons aside.
2
Put the lemon zest into a saucepan with boiling water. Simmer gently for 10 minutes, then remove from the heat. Squeeze the lemon juice from lemons set aside and add to the mixture. Let the mixture sit until cold, then stir in the granulated sugar.
3
Share between 6 tall glasses, adding a mint sprig and two strawberry halves to each one. Top up with ice cubes and sparkling water, and serve at once.
