This light, refreshing meal is bursting with the season’s finest flavours: juicy tomatoes and fresh, aromatic herbs.

Ingredients

Reduced-sodium chicken broth

4 tbsp(s), fat-free

Minced garlic

2 tsp(s)

Cherry tomatoes

2 cup(s), quartered

Uncooked capellini

½ pound(s), cooked and kept warm

Fresh basil

2 tbsp(s), fresh, minced

Fresh parsley

3 tbsp(s), fresh, minced

Semisoft goat cheese

¼ cup(s), crumbled

Table salt

tsp(s), or to taste

Black pepper

pinch(es), or to taste

Instructions

  1. Heat 1 tablespoon broth in a large nonstick skillet over medium-high heat. Add garlic and sauté 2 minutes. Add cherry tomatoes and cook until just wilted, about 1 minute. Add remaining broth and heat through.
  2. Add tomato mixture to cooked pasta; toss to combine. Add herbs and goat cheese; toss to combine. Season to taste with salt and pepper. Serve hot or at room temperature. Yields about 1 cup per serving.
