This no-cook side dish will fast become a summer staple. Bring it to a picnic or serve at your next barbecue.


Uncooked green snap beans

1 cup(s), fresh, chopped into bite-sized pieces

Canned lima beans

½ cup(s), rinsed and drained

Canned drained chickpeas

½ cup(s), rinsed and drained

Uncooked green peas

1 cup(s), fresh or frozen and thawed

Uncooked red onion(s)

½ medium, minced

Balsamic vinegar

¼ cup(s)

Olive oil

½ tsp(s)

Dry mustard

½ tsp(s)

Dried oregano

½ tsp(s)

Dried basil

½ tsp(s)

Table salt

¼ tsp(s)


  1. Mix beans, peas and onion together in a medium bowl.
  2. Combine remaining ingredients together in a cup and toss with bean mixture. Cover and marinate in refrigerator for at least 4 hours or up to overnight.
  3. Yields about 3/4 heaping cup per serving.
