This colourful eye-opener is a nutritious blend of egg whites, eggs and turkey sausage. Sweet onion and bell pepper lend great sweetness.

Ingredients

Olive oil

2 tsp(s), or canola oil

Uncooked turkey sausage

4 oz, sweet or hot, chopped into small pieces

Bell pepper

½ cup(s), green, diced

Onion

cup(s), chopped

Egg whites

6 serving(s)

Raw egg

2 large

Tomato

½ cup(s), fresh, diced

Table salt

tsp(s)

Black pepper

pinch(es)

Instructions

  1. Heat oil in large skillet over medium heat.
  2. Add sausage and cook 3 to 5 minutes, until cooked through, stirring frequently.
  3. Add green pepper and onion, cook 3 minutes, until soft.
  4. Add egg whites and eggs and cook 3 minutes, until egg is cooked, stirring frequently.
  5. Stir in tomato and heat through.
  6. Season to taste with salt and black pepper.
