Ingredients

Vegetable oil

2 tsp(s)

Ginger root

1 tbsp(s), fresh, chopped

Lemon zest

6 tbsp(s), finely zested

Fresh lemon juice

2 tbsp(s)

Uncooked lobster meat

1¼ oz, steamed or broiled, cut into chunks

Cilantro

¼ cup(s), thinly sliced leaves

Fresh basil

¼ cup(s), thinly sliced

Cucumber

1 medium, thinly sliced

Table salt

tsp(s), or to taste

Black pepper

pinch(es), or to taste

Boston lettuce

4 piece(s)

Red onion

½ small, sliced

Instructions

  1. Warm oil in a small nonstick skillet over medium heat; add ginger, sauté 1 minute and transfer to a large mixing bowl.
  2. Stir in zest, lemon juice, lobster, cilantro, basil and cucumber; season to taste with salt and pepper. (Note: You can purchase already cooked lobster meat and skip steaming or broiling it.)
  3. Set a lettuce leaf on each of 4 plates. Arrange salad on top and garnish with red onion. Yields about 1 cup lobster salad per serving.
