Fresh ginger gives bottled teriyaki sauce a bright note. We add it at the end of cooking so the sauce doesn’t burn off from the heat.

Ingredients

Cooked lean ham

3 oz, cut into chunks

Bell pepper

½ item(s), medium, red, cut into bite-sized chunks

Pineapple

½ cup(s), chunks

Uncooked scallions

1 large, cut in 1 to 1 ½-in lengths (plus extra for garnish)

Cooking spray

2 spray(s)

Teriyaki sauce

2 tsp(s)

Ginger root

½ tsp(s), grated

Cooked short grain white rice

½ cup(s)

Instructions

  1. Skewer ham, pepper, pineapple and scallion alternately on two or three skewers; lightly coat with cooking spray.
  2. Combine teriyaki sauce with ginger; set aside.
  3. Grill skewers on preheated stove-top grill pan, turning occasionally, 5 minutes. Brush with teriyaki mixture and serve over rice; garnish with chopped scallions.
  4. Makes 1 serving.
