Teriyaki-glazed leftover holiday ham & pineapple skewers
Cooked lean ham
3 oz, cut into chunks
Uncooked bell pepper(s)
½ item(s), medium, red, cut into bite-sized chunks
½ cup(s), chunks
1 large, cut in 1 to 1 ½-in lengths (plus extra for garnish)
½ tsp(s), grated
Cooked white short grain rice
- Skewer ham, pepper, pineapple and scallion alternately on two or three skewers; lightly coat with cooking spray.
- Combine teriyaki sauce with ginger; set aside.
- Grill skewers on preheated stove-top grill pan, turning occasionally, 5 minutes. Brush with teriyaki mixture and serve over rice; garnish with chopped scallions.
- Makes 1 serving.
