This slaw is lovely as a side dish, taco topping or sandwich garnish. You can cover and refrigerate this slaw overnight, but it’s best fresh.

Ingredients

White vinegar

½ cup(s)

Kosher salt

1 tsp(s)

Sugar

½ tsp(s)

Black pepper

¼ tsp(s), freshly ground

Shredded uncooked napa cabbage

8 cup(s)

Red onion

½ cup(s), sliced, very thinly sliced

Shredded carrots

½ cup(s)

Jalapeño pepper

1 medium, seeded and minced

Dried oregano

½ tsp(s)

Instructions

  1. In a large bowl, whisk together vinegar, salt, sugar and pepper until sugar dissolves. Add cabbage, onion, carrot, jalapeno and oregano; toss well.
  2. Serving size: 1 heaping cup
