Sweet potatoes with chipotle-orange glaze

Ingredients

Sweet potato

3 pound(s), 4 (3/4-lb) potatoes, scrubbed and each cut into 6 wedges

Olive oil

2 tsp(s)

Table salt

¾ tsp(s)

Black pepper

¼ tsp(s), freshly ground

Honey

1 tbsp(s)

Canned chipotle peppers in adobo sauce

2 tsp(s), minced

Garlic

1 clove(s), large, crushed through a press

Orange zest

1 tsp(s), grated

Dried oregano

1 tsp(s)

Ground cinnamon

½ tsp(s)

Ground cloves

⅛ tsp(s)

Cilantro

4 tbsp(s), chopped

Instructions

Preheat oven to 425°F. Line large rimmed baking sheet with nonstick foil.

Toss potatoes, oil, salt, and pepper in large bowl. Spread potatoes, cut side up, in single layer. Roast, without turning, until fork-tender, about 45 minutes.

Meanwhile, combine honey, chipotles en adobo, garlic, orange zest, oregano, cinnamon, and cloves in small bowl.

Serve potatoes with chipotle mixture or drizzle chipotle mixture over potatoes and toss gently to coat. Sprinkle with cilantro.
