Ingredients

Canned mushroom gravy

½ cup(s)

Sweet potato

3 large, peeled and cut into 1/4 - 1/2" wedges

Kosher salt

1 tbsp(s)

Canola oil

1 tbsp(s)

1% low fat cottage cheese

¾ cup(s), crumbled

Chives

2 tbsp(s), chopped

Instructions

  1. Preheat oven to 450°F and line two cookie sheets with parchment.
  2. Heat gravy in a small saucepan and keep warm.
  3. In a large bowl, toss potatoes with oil and salt spread evenly across cookie sheets. Bake for 40 minutes or until well-browned, stirring once and rotating pan positions half-way through.
  4. Pile sweet potato fries on plate, sprinkle with cheese, smother with warm gravy, and garnish with chives.
