Sweet potato dip

Tastes just like sweet potato pie! Serve with baked pita chips and apple or pear slices. Swap cinnamon for the ginger if you prefer.
Chickpeas (15 oz)
1½ cup(s), loose skins removed, washed, drained
Cooked sweet potato(es)
1 cup(s), mashed*
Packed light brown sugar
Fresh orange juice
1 tsp(s), finely minced
1¼ tsp(s), fresh, finely minced
- Combine all ingredients in a food processor or blender; blend until smooth. Allow to set up in refrigerator for about 30 minutes. Yields about 2 tablespoons plus 2 teaspoons per serving.
*If you roast the sweet potato, you’ll bring out its natural sweetness. But you can steam, boil, or microwave the potato before you mash it, if you prefer.
