½ cup(s), chopped

Uncooked sweet Italian turkey sausage

3 oz, or other flavour

Fresh mushroom(s)

½ cup(s), chopped

Cooked sweet potato(es)

½ cup(s), diced

Olive oil

1 tsp(s), for roasting potatoes


2 large egg(s)


  1. Coat a large nonstick skillet with cooking spray. Heat over medium heat. Add onion and cook, stirring frequently, until soft, 3 to 4 minutes. Add sausage, and cook, breaking up any large pieces with a wooden spoon, until cooked through and starting to brown, about 2 to 3 minutes. Add mushrooms and cook, stirring frequently, until soft, another 2 to 3 minutes. Stir in sweet potatoes and cook until warm. Transfer to a serving bowl and cover to keep warm.
  2. Wipe out skillet and off heat, recoat with cooking spray. Place skillet over medium heat. Add eggs and cook until whites start to set, about 2 minutes (or longer, if desired). Flip eggs and let cook for 10 seconds more. Place eggs over sweet potato mixture and serve immediately.
