With Tex-Mex inspired flavours, this oven-baked quesadilla is sure to please.

Ingredients

WW Bread 100% Whole wheat tortilla

1 tortilla(s)

Uncooked sweet potato(es)

½ cup(s), steamed

Chili powder

½ tsp(s)

Table salt

1 pinch

Canned black beans

¼ cup(s), drained and rinsed

Cooked corn kernels

¼ cup(s)

Reduced-fat shredded Monterey Jack cheese

¼ cup(s)

Instructions

  1. Preheat oven to 450°F. Mash together sweet potato, chili powder and salt. Spread over half of the tortilla. Top with black beans, corn and cheese. Fold tortilla over to enclose filling.
  2. Transfer to small baking sheet. Cook for 12 to 15 minutes or until tortilla is golden brown and cheese is melted.
  3. Serving size: 1 quesadilla
