Sweet potato and black bean quesadilla
WW Bread 100% whole wheat tortilla
Uncooked sweet potato(es)
½ cup(s), steamed
Canned black beans
¼ cup(s), drained and rinsed
Cooked corn kernels
Reduced-fat shredded Monterey Jack cheese
- Preheat oven to 450°F. Mash together sweet potato, chili powder and salt. Spread over half of the tortilla. Top with black beans, corn and cheese. Fold tortilla over to enclose filling.
- Transfer to small baking sheet. Cook for 12 to 15 minutes or until tortilla is golden brown and cheese is melted.
- Serving size: 1 quesadilla
