We’ve sweetened up those kid-friendly baby carrots with fresh orange juice. Add some “zing” by tossing in grated fresh ginger before roasting.

Ingredients

uncooked baby carrots

1 pound(s)

orange zest

1 tsp, freshly grated

orange juice

½ fl oz, fresh

canola oil

2 tsp

table salt

¼ tsp

ground cinnamon

Instructions

  1. Preheat oven to 400°F. Toss carrots, zest, orange juice, oil, salt and cinnamon in a 13 X 9-inch baking pan. Cover with foil and bake, shaking pan once to toss, until carrots are crisp-tender, about 30 to 35 minutes.
  2. Uncover pan and roast until carrots are tender and most of liquid has evaporated, about 8 to 10 minutes more. Yields about 3 /4 cup per serving.
