Suya is a smoky, nutty, and spicy West African spice rub made with ground roasted dried peanuts, ginger, and chiles. We help cut the fat but keep the flavour by using peanut butter powder instead of whole peanuts. It especially makes a great rub and dip for grilled meat, but it really goes well with just about anything. Try sprinkling it over your next platter of grilled vegetables, or season fish fillets with it before grilling. If you have any ground African long pepper, add 1/2 tsp to the mix.


Ingredients
Powdered peanut butter
½ cup(s)
Ground ginger
3 tbsp(s)
Vegetable bouillon cube
2 cube(s), crushed into powder
Garlic powder
1 tbsp(s)
Cayenne pepper
1 tsp(s), or up to 2 tsp
Ground nutmeg
½ tsp(s)
Instructions

In medium skillet, stir peanut butter powder constantly over medium heat until it starts to turn deep golden brown, 5 to 7 minutes. Add remaining ingredients to pan and stir until aromatic, about 30 seconds. Let cool. Store in airtight container for up to 6 months.
